Antipasto


Ingredientes

  • 1 pimenton rojo
  • 2 cebollas redondas medianas
  • 1 frasco de vegetales mixtos en conserva
  • 1 cucharada de maizena
  • 2 tazas de salsa de tomate
  • 1 lata grande de champinhones
  • 2 latas de atun en aceite
  • 1/4 libra de mantequilla
  • 4 cucharadas de aceite
  • Aceitunas al gusto

Preparacion

En una sarten colocar el aceite y la mantequilla. Picar la cebolla y el pimenton en tiras delgadas y sofreirlos. Agregar el encurtido, los champinhones partidos en rodajas y dejar freir un poco. Por ultimo agregar el atun,  la salsa de tomate y las aceitunas partidas en rodajas.  Por ultimo diluir la maicena en medio frasco del jugo del encurtido, mezclarlo todo y dejar que espese.  Dejarlo enfriar y conservarlo en la nevera en un frasco de vidrio.  Servir con galletas saltinas, pan arabe o tostadas de pan.

Easy Filet Mignon


  •  4 (6-8 oz) filet mignon steaks
  • Salt and freshly cracked pepper
  • ¼ cup extra virgin olive oil
  • 3 cups thinly sliced mushrooms
  • ¼ cup minced shallots
  • 2 tbsp minced garlic
  • ¾ cup brandy
  • 2 tbsp Dijon mustard
  • 2 tbsp Worcestershire sauce
  • 1 cup red wine
  • ½ cup beef demi glace
  • 1 tbsp unsalted butter
  1. Season filets on both sides with salt and pepper
  2.  Over medium-high heat in a large sauté pan, add olive oil and then the meat.  Brown on both sides, about 3 minutes per side. Remove steak and set aside lightly covered.
  3. Add mushrooms to the pan. Cook for 5 minutes. Add shallots and cook for 2 minutes. Add garlic, and when it become slightly colored, add brandy. Cook, scraping up any brown bits in the pan, until most of the brandy has evaporated. Add mustard, worcestershire sauce and red wine.   Cook 2 minutes to reduce slightly. Add the demi glace and cook 2 to 3 minutes more.
  4. Place meat back in the pan to warm in the sauce
  5. To serve, place one filet on each plate. Swirl butter into sauce and pour over meat.

Mashed Potato Casserole with Sour Cream and Chives


14 tablespoons unsalted butter, softened and more for the pan

6 pounds yukon gold potatoes peeled and cut into chunks

2 tablespoons + 1 teaspoon salt

1 1/2 cups sour cream

1 teaspoon black pepper

6 tablespoons finely chopped chives

2/3 cup bread crumbs

2/3 cup grated parmigiano-reggiano cheese

  • Lightly grease a 9 inch by 13 inch baking pan
  • In a large pot, bring the potatoes, 4 quarts water and 2 tablespoons salt to a boil. Boil potatoes until tender.  Drain.
  • Mash potatoes with 10 tablespoons butter, sour cream, 1 teaspoon salt and pepper.  Mash in the chives. Taste and adjust seasoning. Spread potatoes into prepared pan.
  • In a small bowl, combine 4 tablespoons butter, bread crumbs and cheese. Mix until it forms coarse crumbs.
  • Heat the oven to 400 degrees. Sprinkle crumbs over the top of the potato casserole and bake until golden (30 to 40 minutes).

Green Tomato Pizza


1 pizza crust

1-2 green tomatoes, sliced

1/4-1/2 pesto (depending on size of crust)

Fresh mozzarella

Olive Oil

Salt and Pepper

PREPARATION

  • Preheat oven to temp appropriate for pizza crust
  • Brush crust with olive oil
  • Spread pesto on crust
  • Top with sliced tomatoes
  • Layer with mozzarella cheese
  • Sprinkle with a pinch of salt and black pepper
  • Bake for 7 to 10 minutes

Asparagus Frittata


5 eggs

1/4 cup milk

1/4 cup shredded cheddar cheese

1/4 tsp salt

1/4 tsp freshly ground black pepper

1/2 cup fresh asparagus cut into 1-inch pieces (about 1/2 lb)

PREPARATION

1- Preheat oven to 375 degrees F

2- Coat a 9-inch pie play with cooking spray and set aside

3- Whisk eggs, milk, cheese, salt and pepper.  Stir in asparagus and pour into prepared plate.

4- Bake for 20 minutes. 

Makes 4 large servings. 

NOTE:  You may want to use canned asparagus instead of fresh asparagus if you prefer a softer consistency.

Pollo con Pimenton


4-6 porciones

Ingredientes

  • 6 u 8 presas de pollo untadas de sal y ajo
  • 2 cucharadas de aceite
  • 1 cebolla de huevo picada
  • 1 cebolla larga picada
  • 1 pimenton maduro picado
  • 2 dientes d ajo
  • 1/2 cucharada de azucar
  • 1/2 taza de agua
  • 3 cucharadas de vinagre
  • 1/2 taza de pasta de tomate
  • 1 cucharada de salsa de soya
  • Champinhones al gusto (echar al final si son de lata)

Sofreir todos los ingredientes, tapar y dejar cocinar hasta que ablande el pollo y las verduras.  Si se quiere mas espesa la salsa se espesa con un poco de harina.

Easy Steak Marinade


Ingredients

Directions:

  1. Mix it all together and marinade steak for 30 minutes to overnight.
  2. Grill the steaks or pan fry them in butter.

Lentejas con Tocineta


Este es mi plato de lentejas favorito.  Esta receta alcanza para 4 porciones grandes.

1.5 tabletas de caldo de gallina o carne

1/2 libra de lentejas

4 tiras de tocineta

Media taza de cebolla cabezona blanca rallada

3 tomates pelados y picados

2 cucharadas de mantequilla

Pimienta

Tomillo y Laurel al gusto

Derretir la mantequilla, sofreir la cebolla, tomates, pimienta, tomillo y laurel. Agregar las lentejas, las tabletas de caldo, y agua suficientes para cubrirlas.  Tapar la olla y dejar cocinar hasta que estén blandas.  Aparte freir la tocineta. Cuando las lentejas estén cocidas, servirlas con la tocineta por encima.

Honey Salad Dressing


1/3 Cup Honey

1 teaspoon salt

2 tablespoons vinegar

1 tablespoon prepared mustard

3/4 cup vegetable oil

1 tablespoon scallions (optional)

1 or 2 (to taste) tablespoons poppy seeds

Mix everything except honey in the blender. Then slowly mix with honey.

Pan Seared White Wine Salmon


Ingredients

  • 1 to 1 1/2 lbs fresh salmon
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp basil  
  • 1/2stick butter
  • 1 Tblsp lemon juice
  • 1/4 cup white wine 
  • 2 Tblsp olive oil
  • 1 Tblsp brown sugar (or more to taste)
  • Heat olive oil in skillet. Sprinkle salt and pepper on fillets and sear on both sides for 3 to 4 minutes on each side.
  • Melt butter in sauce pan and add wine, lemon juice and remaining dry spices. Check to see if more brown sugar is desired.
  • Remove salmon from skillet and place on a plate and pour sauce over it.
