- 4 8-ounce pork slices
- 1 clove garlic
- 1 tsp dried rosemary
- 1 tsp dried basil
- A pinch of black pepper
- Juice of 2 limes
- 2 Tbsp Olive Oil
- Salt to taste
- 3/4 cup feta cheese
- Mix garlic, basil, rosemary, and pepper in a small bowl. Add lime juice to a separate bowl
- Heat oil in a skillet over medium heat
- Dip both sides of pork in lime juice, then sprinkle both sides with herb mixture
- Add pork to skillet and cook about 6 minutes per side
- Reduce heat to low, sprinkle feta cheese on pork, cover and cook for a couple of minutes.
- Serve drizzled with drippings
