- 2 tbsp butter
- 1/2 cup chopped onion
- 1 minced garlic clove
- 1/2 cup chopped green pepper
- 1 + 1/2 cups water
- 3/4 cup uncooked rice
- 1 bay leaf
- 1/2 tsp chicken flavored bouillon
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 tbsp chopped fresh parsley
- Melt butter in a saucepan over medium heat. Add onion and cook until translucent (approx. 5 min). Stir in garlic and cook 1-2 minutes. Add bell pepper and cook until it begins to soften (2 min).
- Stir in water, rice, bay leaf, bouillon, salt and pepper and bring to a boil.
- Reduce heat to low, and simmer covered until rice is tender (15-20 min).
- Remove from heat, stir in parsley and remove the bay leaf
- Fluff rice with a fork
