- 2 cups flour
- 3/4 tsp salt
- 1/2 tsp baking soda
- 2 eggs
- 1 cup white sugar
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup sour cream
- 1.5 cups fresh blueberries
- Preheat oven to 375 degrees F
- Line 12 muffin cups with liners
- Stir together flour, salt, and baking soda and set aside
- Beat eggs in a bowl with a mixer, gradually adding sugar. Continue beating while adding oil and vanilla extract
- Add flour mixture alternately with sour cream. Fold blueberries
- Scoop batter into muffin cups
- Bake 20 to 25 minutes until a toothpick inserted in the center comes out clean
